-1 In a small saucepan, warm the strawberries over medium heat until the berries have broken down and released their juices, about 5 minutes. -1 Scoop the strawberry "soup" out of the saucepan and into a heat-safe bowl. -1 Over low heat, add the orange juice, cornstarch and maple syrup. -1 Heat until the mixture has thickened slightly, about 2-3 minutes. -1 Add the strawberries back in, and bring to a boil, then lower the heat and simmer for 5 minutes. -1 Transfer the mixture back to a bowl, and let cool for about 30 minutes. -1 When the strawberry mixture has cooled, scoop in the yogurt and mix gently until combined. -1 Cover with plastic wrap, and chill in the refrigerator. -1 Dollop 6 tablespoons of the mousse into your four bowls.
