What you need

tsp baking powder

tsp apple pie spice

tsp kosher salt

cup apple butter

cup granulated sugar

cup apple cider

tsp vanilla extract
Instructions
0 Preheat the oven to 400°F. Line a muffin tin with baking cups, then spritz with baking spray. Set aside. 1 Measure the flour, baking powder, 1 teaspoon of apple pie spice and kosher salt in a medium bowl. Whisk to combine. Set aside. 2 Combine the apple butter, sugar and apple cider in a large bowl. Whisk together until combined and smooth. 3 Measure in the eggs and vanilla extract. Whisk together until completely incorporated. 4 Slowly sprinkle the dry ingredients into the wet ingredients, mixing with a rubber spatula until just combined. 5 Scoop the batter into the prepared baking cups. (I added 4 tablespoons of batter to each.) 6 Mix the remaining sugar with the remaining apple pie spice in a small bowl. Sprinkle the sugar-spice mixture over the tops of the muffins, then transfer to the preheated oven. 7 Bake the muffins for 25-28 minutes, or until the tops have browned slightly and an inserted toothpick comes out clean. 8 Let the muffins cool for 15-20 minutes, then enjoy with a favorite breakfast beverage!View original recipe
