Slow Cooker Beef Stew

What you need

2 tbsp extra-virgin olive oil

2 ¼ lb stew meat

2 onion

3 carrot

¼ cup all purpose flour

1 cup red wine vinegar

6 cup beef broth
Instructions
1 Season the beef liberally with salt and pepper. 2 Sear the beef in the olive oil until all sides of the meat are browned in a large skillet over medium-high. Remove from the skillet, and transfer to the slow cooker. 3 Sauté the onions, carrots and celery until they've cooked down slightly and have softened. You can do this in the same skillet. The veggies will pull up the browned bits in the bottom of the skillet. 4 Add the flour to the skillet, and stir it into the vegetables, cooking for another three minutes until the raw flour flavor has cooked out of them. 5 Deglaze the skillet with the red wine, and let the wine cook down. Scrape the bottom of the skillet to loosen any browned bits. 6 Transfer the vegetables and wine to the slow cooker. 7 Pour the beef broth on top of the vegetables and meat. 8 Cook for 8+ hours on the low setting. 9 Thirty minutes before serving, turn up the heat to high and add the russet potatoes. 10 Serve warm, and enjoy!View original recipe
