lb salmon

cup fresh spinach

cup parmesan cheese

cup pasta water

lb shell pasta

cup pine nut
Instructions
1. Season the salmon with salt and pepper. Roast at 300F for 20-30 minutes. The time will depend on how thick the filet is, so keep an eye on it. When it's cooked through, remove from the oven. 2. In a food processor, blend together the spinach, parmesan, pine nuts, and extra virgin olive oil. Blend until smooth. Taste, then season with salt and pepper as desired. 3. Cook pasta shells al dente, reserving ½ cup of pasta water. 4. Toss the cooked pasta with the pesto. Add the reserved pasta water to help the sauce bind to the pasta. 5.
