What you need

cup cocoa powder

cup granulated sugar

cup cornstarch

tsp baking powder

tsp baking soda

tsp kosher salt

cup buttermilk

cup oil

tsp vanilla extract

tsp red food colour
Instructions
0 Combine the dry ingredients — the flour, cocoa powder, cornstarch, baking powder, baking soda and salt — in a large bowl and whisk together. 1 In a smaller bowl, combine the wet ingredients — the buttermilk, egg, vanilla extract and red food coloring — and whisk until smooth. 2 It is important to stir this vigorously so that the egg mixes into the rest of the wet ingredients. 3 Pour the wet ingredients into the dry ingredients and slowly whisk together, stirring until just combined. Do not overmix the batter. 4 Preheat the waffle iron and spritz lightly with cooking spray. 5 Pour ½ cup of the batter into the warmed waffle iron, spreading with a rubber spatula until at the edges. 6 Cook per the manufacturer's instructions. (I like mine crispy on the outside, so I cook them on a higher setting. To each their own.) 7 When the waffles are cooked to your liking, serve warm with a drizzle of cream cheese frosting.
