Prepare the Blackberry Layer 1 In the blender, combine the vanilla ice cream, milk and blackberries. 2 Blend until smooth. 3 Pour into a glass, and transfer to the freezer. Prepare the Pineapple Layer 1 In the blender, combine the vanilla ice cream, pineapple, juices and optional food coloring. 2 Blend until smooth. 3 Leave in the blender base and transfer to the freezer until time to layer and serve. Prepare the Parfaits 1 Pour a fourth of the pineapple layer into the bottom of a parfait glass. 2 Layer the blackberry on top of the pineapple layer. 3 Dollop one more layer of pineapple and blackberry, then repeat the process in another parfait glass. 4 Serve immediately (or freeze until time, removing about 10 minutes before if frozen for a few hours) and enjoy with fresh fruit on top!View original recipe
