Peanut Blossoms

1 Preheat the oven to 375°F. Line a baking sheet with parchment paper or a nonstick baking mat. Set aside.
2 In a large mixing bowl, cream the butter and peanut butter together until mixture is smooth.
3 Gradually add the granulated sugar and brown sugar to mix.
4 Add the egg and the vanilla extract and beat well.
5 Blend in the self-rising flour.
6 Shape dough into 1" balls in the palm of your hand, and roll in granulated sugar.
7 Bake 8 minutes.
8 Remove from oven and place kiss in the center of each cookie. Push kiss down firmly so cookie cracks around the edge.
9 Return cookies to the oven and bake for 4 more minutes or until golden brown.
