Peach Julep Popsicles

Make the Mint Simple Syrup
2 In a heavy-bottomed saucepan, combine the water and sugar.
3 Heat over medium-high heat until the sugar has completely dissolved into the water.
4 Remove from the heat, and add the mint.
5 Let the ingredients steep for 30 minutes, then strain and set aside.
Make the Popsicles
8 In the base of a blender, combine the peaches, bourbon and mint simple syrup.
9 Blend until smooth.
10 Pour into popsicle molds, then freeze overnight (or until frozen solid.)
11 Serve cold, and enjoy all summer long!
