Oatmeal Cinnamon Cookies with Maple Cream Cheese Glaze

What you need

tbsp unsalted butter

tbsp coconut oil

cup dark brown sugar

cup maple syrup

tsp vanilla extract

cup unbleached flour

tsp ground cinnamon

tsp baking powder

tsp baking soda

tsp kosher salt

oz cream cheese

tbsp powdered sugar
Instructions
1 Preheat the oven to 350°F. Line two baking sheets with parchment paper, and set aside. 2 In a large mixing bowl, whisk together the dry ingredients -- oats, flour, cinnamon, baking powder, baking soda and kosher salt. Set aside. 3 In another large mixing bowl, cream the softened butter, coconut oil, brown sugar and maple syrup until smooth with a hand mixer (or a stand mixer using the paddle attachment). 4 Add the egg and the vanilla to the butter/sugar mixture and beat until well combined. 5 Slowly measure in the dry ingredients into the wet ingredients. Beat until combined. 6 Using a 1" greased cookie scoop, dollop the cookies onto the lined baking sheets, spacing them about 1 1/2" apart. 7 Transfer the baking sheets to the oven, and bake for 10-15 minutes, or until the cookies have set and are slightly soft (but not too soft.) 8 While the cookies are cooling, prepare the glaze. 9 Measure the cream cheese, maple syrup, powdered sugar and vanilla extract into the bowl of a food processor. Blend until smooth. You can also do this step by hand or with a hand mixer, though I've found the glaze doesn't come out as smooth. 10 When the cookies have cooled, drizzle the glaze over them, and enjoy!View original recipe
