No Mayo Potato Salad

Potato Salad is a favorite summertime side... but oftentimes, it's weighed down by too much mayonnaise. This No Mayo Potato Salad is a lighter rendition of the classic, and is just as scrumptious. Red potatoes serve as the base, and they, along with hardboiled eggs, celery and green onions, are tossed in a light, flavorful dill vinaigrette. Serve at any picnic or cookout this summer and expect compliments on this surprisingly creamy potato salad.

What you need

lb red potato, cut into ½" rounds

hard-boiled egg, (shelled and diced)

celery, finely chopped

green onion, chopped

tbsp white wine vinegar

clove roasted garlic, minced

tbsp fresh dill

tbsp dijon mustard

tbsp honey
Instructions
Prepare the potatoes 2 Slice the [wprm-ingredient text="1 ¼ lb. red potatoes" uid="1"] into ½" rounds, as if you were making potato chips, with a knife or a mandoline. 3 Place the red potatoes in a large saucepan full of cool water. 4 Bring the potatoes to a boil, cooking until fork tender. 5 Remove from the heat, drain, and set aside to cool. Prepare the dressing 8 Combine [wprm-ingredient text="4 tablespoons extra virgin olive oil" uid="6"], [wprm-ingredient text="2 ½ tablespoons white wine vinegar" uid="7"], [wprm-ingredient text="2 cloves roasted garlic" uid="8"], [wprm-ingredient text="2 tablespoons fresh dill" uid="9"], [wprm-ingredient text="1 tablespoon dijon mustard" uid="10"] and [wprm-ingredient text="1 tablespoon honey" uid="11"] in a mason jar. 9 Shake until combined. 10 Taste, then season with [wprm-ingredient text="Salt and pepper to taste" uid="12"]. Set aside. Make the potato salad 13 In a large bowl, combine the cooked potatoes with the chopped [wprm-ingredient text="2 hardboiled eggs" uid="2"], [wprm-ingredient text="3 ribs celery" uid="3"] and [wprm-ingredient text="4 green onions" uid="4"]. Toss lightly. 14 Pour half of the dressing over the potato salad, stirring gently. 15 Add more dressing if desired.
