Preheat the oven to 400F, and spray a muffin tin with nonstick baking spray. In a large bowl, break the Happy Egg eggs, and whisk. Add in the zucchini, onions, cheese and bacon. Season with salt and pepper, and stir until combined. Place the cubed sandwich bread in the muffin tin, then pour 2-3 tablespoons of the egg mixture over it. Smooth with a spatula, then bake for 25-28 minutes. When golden brown, remove from the oven, and let cool, then enjoy.View original recipe
