Lemon Drop Cookies

Fluffy, light drop cookies containing lemon zest, topped with slightly sweet and tart lemon glaze. These Lemon Drop Cookies are the perfect non-chocolate holiday cookies!

What you need

cup unsalted butter

cup granulated sugar

tsp vanilla extract

cup milk

tbsp lemon peel

cup unbleached flour

tbsp baking powder

tsp kosher salt

cup powdered sugar

tbsp lemon juice
Instructions
1 Preheat the oven to 375°F. Line a baking sheet with parchment paper, and set aside. 2 In a large bowl, blend together the butter and sugar using a hand mixer. Blend until smooth and creamy. 3 Add the egg and vanilla to the butter/sugar mixture, and mix until smooth. 4 Add the milk and the lemon zest, blending until smooth. (The batter will be quite liquid-y at this point. Don't fret!) 5 Whisk together the flour, baking powder and salt in another bowl, and add to the wet ingredients. Stir until just mixed. 6 Using a greased cookie scoop, dollop the cookies onto the prepared baking sheet about 1 1/2" apart. 7 Bake for 10-12 minutes, or until the cookies are golden brown and cooked through. 8 Transfer cookies to a cooling rack. 9 Make the glaze by whisking together the powdered sugar and lemon juice until smooth. 10 Drizzle the glaze over the cookies once they have cooled, then enjoy the cookies at room temperature!View original recipe
