Brine the Brisket 1 Place the brisket in an extra large plastic bag. 2 Measure in the sweet tea, barbecue sauce, hot sauce, salt and lemons. 3 Add handfuls of ice to the bag until the brisket has been completely immersed in the brining liquid. 4 Place the plastic bag on a baking sheet or a large baking dish with high sides, and refrigerate. 5 Brine for 24-48 hours. Cook the Brisket 1 Remove the brisket from the brine. 2 Reserve some of the brine for cooking, and dispose of the rest. 3 Pat the brisket dry using a clean kitchen towel or paper towels. 4 On a clean cutting board, coat the brisket in the BBQ dry rub on all sides. 5 In the Instant Pot, measure out the barbecue sauce and brine, and whisk together in the base. 6 Place the brisket on top of the liquids so the fat side is on top. 7 Cook on High Pressure (Normal) for 1 hours and 25 minutes. 8 When the cooking has finished, manually depressurize the Instant Pot. 9 When depressurized, remove the brisket from the Instant Pot with tongs. 10 Place the brisket on a cutting board and slice thin using a sharp knife. 11 Brush with additional cooking liquid before serving, and enjoy immediately!View original recipe
