Instant Pot BBQ Brisket

Brine the Brisket
2 Place the brisket in an extra large plastic bag.
3 Measure in the sweet tea, barbecue sauce, hot sauce, salt and lemons.
4 Add handfuls of ice to the bag until the brisket has been completely immersed in the brining liquid.
5 Place the plastic bag on a baking sheet or a large baking dish with high sides, and refrigerate.
6 Brine for 24-48 hours.
Cook the Brisket
9 Remove the brisket from the brine.
10 Reserve some of the brine for cooking, and dispose of the rest.
11 Pat the brisket dry using a clean kitchen towel or paper towels.
12 On a clean cutting board, coat the brisket in the BBQ dry rub on all sides.
13 In the Instant Pot, measure out the barbecue sauce and brine, and whisk together in the base.
14 Place the brisket on top of the liquids so the fat side is on top.
15 Cook on High Pressure (Normal) for 1 hours and 25 minutes.
16 When the cooking has finished, manually depressurize the Instant Pot.
17 When depressurized, remove the brisket from the Instant Pot with tongs.
18 Place the brisket on a cutting board and slice thin using a sharp knife.
19 Brush with additional cooking liquid before serving, and enjoy immediately!
