Grilled Shrimp Salad with Homemade Lime Vinaigrette

What you need

head butter lettuce, chopped

lb shrimp

cucumber, peeled and diced

red onion, about [adjustable]½[/adjustable] cup sliced thin

corn, grilled, with kernels removed

avocado, sliced

cup cherry tomato, halved

orange bell pepper, about [adjustable]½[/adjustable] cup sliced thin

radish, about [adjustable]¼[/adjustable] cup sliced thin

cup cotija cheese

tbsp fresh lime juice

lime, zested

kosher salt, to taste

fresh ground black pepper, to taste
Instructions
Make the salad. 5 Place the chopped butter lettuce in a large bowl. 1 Layer the shrimp, cucumber, red onion, corn kernels, avocado slices, cherry tomatoes, orange bell pepper, radishes and cotija cheese. 9 Toss the salad ingredients together, and set aside. Make the vinaigrette. 6 Measure in the olive oil, lime juice and lime zest into a mason jar. Season with a pinch of salt and pepper. Place the lid on, shake and taste, adding more salt or pepper if necessary. 3 Pour the lime vinaigrette over the salad ingredients, and toss gently using salad tossers or tongs. 4 Serve immediately, and enjoy!View original recipe
