What you need

cup coconut oil

cup granulated sugar

cup dark brown sugar

tsp vanilla extract

cup unbleached flour

tsp kosher salt

tsp baking soda
Instructions
1 In a large mixing bowl, combine the coconut oil, applesauce and sugars until creamed together. 2 Add in the egg and vanilla extract, beating until combined. 3 Combine the dry ingredients -- flour, salt and soda -- in a smaller bowl. 4 Measure in half of the dry ingredients, mixing until combined, then add the other half, blending until the batter has come together. 5 Measure in the dark chocolate chips, and stir in with a spoon. 6 Chill the dough for at least 2 hours (or overnight.) 7 Preheat the oven to 350°F. Line a baking sheet with parchment paper. 8 Using a cookie scooper, measure out 1" rounds of the cookie dough. 9 Evenly spread the cookie dough rounds out on the baking sheet, 2" apart. 10 Bake for 10-15 minutes, or until golden brown. 11 Enjoy warm with a glass of your favorite kind of milk!View original recipe
