What you need

english cucumber

tbsp extra-virgin olive oil

tbsp red wine vinegar

tsp mustard

cup feta

tsp garlic powder

tsp dried oregano

tsp dried basil

tsp ground black pepper

tsp kosher salt

tsp onion powder

Instructions


-1 Peel the cucumbers with a vegetable peeler. Run a fork down the flesh of the cucumber to create ridges in it. (This is a trick my dad uses to help the cukes soak up some of the dressing.)
-1 Slice the cucumbers into thin rounds, then transfer to a large serving bowl. Set aside.
-1 In a mason jar, combine the ingredients for the Feta Vinaigrette. Once all measured in, place the lid on the mason jar, and shake vigorously until combined. Taste and add more salt and pepper, if needed.
-1 Pour the vinaigrette on top of the cucumbers, then toss with a spoon to ensure all the cucumbers are coated, and serve.
