-1 In a medium-sized bowl, combine the dry ingredients -- flour, baking powder, baking soda and salt -- and whisk together. Set aside. -1 In a large bowl, combine the wet ingredients -- dark chocolate almond milk, eggs, vanilla extract and coconut oil -- and whisk until incorporated. -1 Pour the dry ingredients into the wet ingredients, stirring until just combined. Set aside, and let rest for 5-10 minutes. -1 While the batter is resting, heat a skillet over medium-high heat. Grease the pan with butter or cooking spray. -1 Dollop the pancakes onto the preheated skillet when ready, and sprinkle a few chocolate chips on the top of each pancake. -1 Flip each pancake when several bubbles have formed on the surface, and cook through. -1 Enjoy warm!
