Baked Sweet Potato Cubes with Butter and Bourbon

Be still, my bourbon-, butter-, and sweet potato-loving heart! Bourbon Butter Sweet Potatoes make a DELICIOUS, flavorful side for the Thanksgiving table this year and are SO simple to make! Cube sweet potatoes, then douse them in a mixture of butter and bourbon. Season them with fresh thyme, salt and pepper and bake for 45 minutes. Broil the potatoes to add a nice crunch, then serve warm. This bourbon-y, buttery side dish is holiday meal perfection.

-1 Preheat the oven to 350°F. Line a baking sheet with parchment paper or a nonstick baking mat. Set aside. -1 Cube the sweet potatoes. Transfer them into a large bowl. Set aside. -1 In a microwave-safe dish, heat the unsalted butter until melted. Add the bourbon to the butter. -1 Pour the bourbon butter over the sweet potatoes. Using a spoon, toss the potatoes with the bourbon butter until all are coated. -1 Season the sweet potatoes with the thyme, salt and pepper. -1 Transfer the potatoes to the prepared baking sheet.
